I hope you’ve had a good week! This week has been full of hard work at the farm, and when I paused for a moment to catch my breath, I realized something surprising: my body has never felt stronger or healthier than it does right now 💪 

And honestly, it didn’t happen by accident.

It almost feels embarrassing to admit the changes I’ve had to make, and that I didn’t do it sooner. Before I moved out here, my days were nonstop. I barely had the energy to make choices that actually supported me.

Being lost in the «rat race», so consumed with the whole «who looks the best on Instagram» game, that I forgot to actually be present, to listen to my body and take responsibility for my own well-being, so I could truly thrive.
Maybe you know the feeling? Life moves so fast that getting through the day is all you can manage, and everything else gets pushed to the bottom of the to-do list.
Looking back, it’s no wonder I felt off. I ignored all the signals my body was sending, while living on quick meals and whatever was easiest. I even thought people were overreacting when they talked about organic food or hidden chemicals in our everyday lives.

I thought I was busy with the «important stuff» and didn’t have time to worry about those things. I couldn’t have been more wrong 🤦🏼♀️

The Turning Point

The real wake-up call hit me when I was finally diagnosed with IBS after years of discomfort. That diagnosis forced me to take my health seriously and finally gave me part of the answer to why I had been feeling so off, and what I could do to start feeling better.❤️🩹

Since then, moving to the countryside and shifting my lifestyle completely, I’ve been diving into research. About my own health, and about the way modern life affects all of us. And what I’ve found is honestly shocking.

For example, did you know that a recent study once again links ultra-processed foods to a much higher risk of developing psoriasis? If you already have a genetic risk, a poor diet could make you almost three times more likely to develop it. It’s a wake-up call I can’t ignore. I’m happy to see so many people being helped by the Ultra Fast Relief Balm, but I always advice my friends to address the root problem!

And that’s just one small piece of the puzzle. There’s so much more we’ve been surrounded by, every day, that quietly affects our bodies, our skin, and even our energy levels. It’s eye-opening, and it’s the reason I’ve started making very deliberate choices about what I eat, what touches my skin, and what I bring into my home.

I’m convinced that one day we’ll shake our heads at how we lived, just like we now look back at how common smoking once was, or that we used to build our homes with asbestos.

Small Daily Choices🌱

It often starts small: the choices we make every day for ourselves and our homes. Cooking with clean ingredients, growing organic veggies, avoiding ultra-processed products.

Personally, I use a Norwegian app that recognizes almost all foods sold here, and with one quick scan tells me if something is ultra-processed or not. I’ve been floored more than once by what I’ve discovered! I tried to find an American version of the app I’m using, and I found several. But the app called Processed - Food Scanner App seem to be the most promising.

What Touches Our Food

And speaking of food: we can’t forget what touches our food.

Did you know black plastic utensils are often made from recycled e-waste? That means they can contain toxic chemicals, like decaBDE, a substance linked to hormone disruption, liver problems, even cancer risks.

A recent study found toxic flame retardants in 17 out of 20 tested items made with black plastic, including kitchen utensils and food service ware.

And yes, those chemicals can leach into your food 😳

Clean ingredients don’t help much if our cutting boards and utensils are leaking plastic into our meals. I was way too late to this myself, but better late than never!

I’ve now thrown out all plastic utensils in my home and replaced them with stainless steel and silicone where steel isn’t possible. Yes, it costs a little more, but it’s absolutely worth it.

Another change I made recently was swapping out my laundry detergent. The old one had an ingredient list as long as a novel, filled with names I couldn’t even pronounce. No wonder my sensitive skin was itching and breaking out nonstop. With the new one, clothes come out just as clean and soft, but instead of scratching me like thorns, they feel like a warm hug.

The Recipe!

As promised here’s how to make these delicious buns

Ingredients:
400 g cottage cheese
3 eggs
1 tsp baking soda
1 tsp salt
400 g quick oats
How to make them:
1️.Blend cottage cheese and eggs in a food processor until smooth.
2. Add baking soda, salt, and oats, and blend until you get a sticky dough. Feel free to mix in any flavors you like!
3️.Turn the dough onto the counter. If it’s too soft, add a little extra oats. Divide into 8–10 pieces and roll into balls. Place them on a baking sheet lined with parchment, leaving some space. Wet your fingers and flatten them to about 1 ½ cm thick.
4️.Bake in a preheated oven at 210 °C (410 °F) for 12–15 minutes, until golden brown. Cool on a rack and enjoy immediately 😍
