Confession: life on the farm this week has been… intense.

Between Storm Amy (that tried to blow our brand-new lawn to Sweden 😅), a few last harvests from the garden, and cozy baking experiments that actually worked (zucchini bread, who knew?), I’ve been thinking a lot about balance.

And that feels fitting - because today, October 10th, is World Mental Health Day.
A day to raise awareness, share compassion, and remind ourselves (and each other) that taking care of our minds is just as vital as caring for our skin ❤️🩹

So in today’s letter, I wanted to share a few things close to my heart:

This topic is deeply personal for me, as I’m sure it is for many of you.
I’ve seen loved ones in close family fall out of work because of mental health challenges. I’ve watched friends wake up to a darkness that makes it hard to move.
And a few years ago, when my mom became seriously ill, I too reached a breaking point.
I was signed off work with acute stress and exhaustion. Thankfully, my leave was short - and my mom recovered - but that period changed everything for me and my family. It taught us how easily we forget to care for ourselves while caring for everyone else.
Someone once told me something I’ve never forgotten:

You want to return it in good condition, maybe even better than you received it.

And speaking of being grateful: nature gave us quite a reminder of that this week.
Storm Amy, said to be the strongest in 25 years, swept across Norway with full force ⛈️

Many lost power, roofs, and even homes. No lives were lost, thank God, but my heart goes out to every family who was hit hard.

We were lucky.
The wind shook our little farm too,
but the only real casualty here…
Was our brand-new lawn.

After a sleepless, stormy night, my man shouted at 6 am:

“Line! You have to come see this!”
Our brand-new lawn - the one we just rolled out two weeks ago - had been peeled off like potato skins and blown straight across the field 😂


By noon, we were rolling the same grass for the second time (and saving whatever pieces the storm hadn’t claimed).
Down the hill, a neighbor’s old barn had lost its roof entirely, and the fire department was securing the area.
That sight made everything else - our lawn, our pots, our chaos - feel small.

Later that evening, I got a call from my parents - worried after hearing that a camper nearby had been destroyed.
I drove out to check theirs, and thankfully, it stood unharmed. Still, I couldn’t stop thinking about everyone who wasn’t so lucky.


So yes, this week brought perspective, and a humbling reminder that control is an illusion. Sometimes, all you can do is roll with it (literally 😅).

🍞 Recipe of the week: Zucchini bread magic

Before the storm hit, I managed to harvest what’s likely the last of this year’s vegetables.

The zucchini crop was my unexpected hero, and this week, I turned it into a warm, soft, slightly sweet zucchini bread.

The heart of Frøya

Recipe for moist & wholesome zucchini bread 🍞

Soft, slightly sweet, and nourishing - perfect as breakfast, a snack, or a cozy afternoon treat.

The zucchini keeps it beautifully moist, and the flavor is gently spiced, like a lighter, fresher version of banana bread.

Ingredients (1 small loaf, about 6 slices):
2 eggs
2 tbsp honey or maple syrup
2 tbsp olive oil or melted butter
1½ dl (⅔ cup) whole grain flour, oat flour, or spelt flour
½ tsp baking powder
½ tsp baking soda
½ tsp cinnamon (optional)
1½ dl (⅔ cup) grated zucchini (squeeze out a little moisture, but not all)
A pinch of salt
(optional) a small handful of chopped nuts or raisins

Method:
1. Preheat oven to 180 °C / 350 °F.
2. Grate the zucchini and gently squeeze out excess liquid with your hands or a clean cloth (don’t overdo it — a bit of moisture keeps the bread soft).
3. Whisk eggs, honey, and oil together in a bowl for 1–2 minutes until the mixture looks pale and slightly frothy — light and airy.
4. Mix the dry ingredients (flour, baking powder, baking soda, cinnamon, salt) in another bowl.
5. Combine: Pour the dry ingredients into the wet mixture, then fold in the grated zucchini and any nuts or raisins. Don’t overmix — just stir until everything is evenly combined.
6. Pour the batter into a small loaf tin lined with baking paper.
7. Bake for about 30–35 minutes, or until a toothpick comes out clean.
8. Cool in the tin for 10 minutes before transferring to a rack.

Tips:
- Delicious with a bit of butter, nut butter, or Greek yogurt and honey on top.
